We’ve been salivating over this corn zipper for over a year, mostly because here at HQ we have dueling Corn Salad recipes that we have finally brought out now that it is summer.  So we thought we’d share the first recipe with you today which has a bit of the Southwest and a whole lot of taste:

Corn Zucchini Summer Salad

6 Ears of Sweet Corn (corn pulled from ear with zipper!)
4 Small Zucchini Sliced Thinly
1 Can Diced Green Chilies
1 Small Yellow Onion Diced
2 Tbsp Diced Garlic
4 Tbsp Butter
2 Tbsp Ground Cumin
1 Tbsp Red Chili Flakes
Salt and Pepper To Taste

Sautee onions and garlic in butter until transparent.  Add green chilies and zucchini and cook for 15 minutes.  Then, add corn and spices and cook for 10 more minutes until corn is fully heated but not completely cooked.  Serve warm.
