Excellent idea of a gift! What a perfect idea, as said for camping, but more so for a small kitchen, or studio apt. Great space saver!

Does it lock into the open position? Or do you have hold it open (which is what it looks like in the red photo)?

No.. It does not lock into open position. So it needs a firm fist. And do to the opening, creating the “easy grip”(right…), it makes an awfully mess. So make sure to wear an apron and wipe the floor afterwards.
